

The town of Signal Mountain is encouraging a healthier community through the Town Council’s approval of a resolution supporting organic foods grown locally.
“It doesn’t specifically do anything other than say we think it’s a good idea to promote organic farmers, local produce and good eating habits,” said Councilman Paul Hendricks who suggested the resolution which received unanimous approval. “It just expresses the sense of the council. We’ve talked about several things on a practical point of view that would be consistent with this.”
In addition to sustaining the local economy and health of the community, Hendricks said the resolution may lead to the implementation of other initiatives such as community gardens at Mountain Arts Community Center and a farmer’s market on the mountain.
“There are just a lot of good tie-ins to this,” he said. “I’m a big believer that small is beautiful. People can do things at a small level as opposed to huge agricultural factories.”
As a physician, Hendricks said he sees a bounty of benefits to such actions.
“A lot of times they use chemicals that may not be good for the individual or the environment,” he said of major food sources. “Locally grown foods are good for you, with fewer or no chemicals, pesticides, antibiotics, hormones, all those things that get put into (non-organic food).”
